Cooking with Caroline: Green Mountain Plant-Based Power Smoothie

Mornings are hard, but it’s never a good idea to skip the most important meal of the day. Your body needs good clean fuel, so power up first thing with this hearty, green, and plant-based power smoothie.

Drink it on the go, or sip it slowly while you read the paper. Either way, you’ll be getting all the protein, potassium, iron, and calcium you need to power through your busy day with this plant-based breakfast recipe. 

Perfect breakfast for a busy morning. Hearty enough to keep you full until lunch.

 

Serves: 1 for breakfast

Prep time: 5 minutes (freeze the banana the night before)

Ingredients 

1 frozen banana

1 large handful spinach or kale

2/3 cup almond milk or coconut milk (unsweetened), or soymilk (suggested: West Soy)

2 tablespoons natural peanut butter or cashew butter

Directions

  1. Blend ingredients in a blender until smooth
  2. Enjoy
