Dairy-Free French Onion Walnut Gravy Recipe

Thick, creamy, and oh-so-flavorful, pour over a baked potato and you’ll question why you ever used butter in the first place. We’re always on the lookout for versatile recipes and this one is no exception. Drizzle it over your quinoa bowl, smear it onto a sandwich, spoon it over stuffing or mashed potatoes, use it as a creamy French onion dip!

Prep Time: 8 minutes

Cook Time: 20 minutes

Ingredients:

-2 onions, sliced into half moons

-2 cloves of garlic, minced

-2 TBS of low sodium tamari

-4 cups of low sodium veggie broth

-1 tsp of garlic powder

-1 tsp of onion powder

-1/4 a tsp of ground thyme

-Crushed black pepper to taste

-1/4 cup of chopped walnuts (soaked until soft and strained)

-1/4 cup of chopped walnuts

Instructions:

  1. Cook onions and garlic in a cup of veggie broth until translucent, and onions begin to stick
  2. Deglaze with a few cups of veggie broth, and tamari, spices, and the (non-soaked) chopped walnuts. Cook for an additional 10 minutes
  3. Blend together: the soaked walnuts and enough veggie broth to cover until creamy. Add ½ of the onion mixture and blend again
  4. Pour blended walnut mixture back into onion mixture and stir
