This dairy-free potato leek soup is the perfect savory remedy for your comfort food cravings. And with only 8 ingredients and a 25 minute cook time, you can enjoy your hearty vegan comfort food sooner rather than later...preferably with a good book and your favorite throw blanket.
Prep Time: 5-10 minutes
Cook Time: 25 minutes
Yield: 4-5 servings
2 clove garlic, diced
2 leeks, diced
4 Yukon Gold potatoes, chopped
2 ribs celery, chopped
4 cups veggie broth
2 cups water
1/2 cup nutritional yeast
4 cups of kale or spinach pepper to taste
Saute for 3 minutes in soup pot over medium heat...
Leeks, celery, and garlic plus a little water
Add then bring to a boil...
Potatoes, veggie broth, and water.
Reduce to simmer and cover for 20 minutes then...
Check to see if potatoes are tender.
If they are, blend...
Half the soup until creamy. You can use an immersion blender OR ladle half the soup into your blender then add back to the pot when creamy.
Stir in until wilted...
Spinach and/or kale and stir until wilted.
Add nutritional yeast and serve.

Skeptical. I was definitely skeptical but I am very happy to say I ended being delightfully surprised!
