Easy Dinner Recipe: Plant-Based Vegetable Fried Rice

Thanksgiving may be over, but the holidays aren’t. Tired of squash, pumpkin spice, stuffing and cranberry? Take a break and try this super simple plant-based vegetable fried rice. The perfect easy dinner recipe. The ingredients cost me less than $5.00 and it only took 15 minutes to make! Make things easy now, because round 2 of the Holidays is just around the corner.

Prep Time: 15 minutes

Yields: 3-4

Cooking Method: Stovetop 

Ingredients:

1 onion, diced

A few TBS of veggie broth

2 cloves of garlic, minced

2 cups of frozen peas and carrots

2 cups of cooked brown rice

5 TBS of tamari

Instructions:

  1. Sauté onion in veggie broth until soft (8 minutes), then add garlic and cook an additional minute
  2. Add rice, veggies and tamari and cook on high heat until soft
  3. Enjoy!
