Scalloped Potatoes

These are standing over the kitchen counter, eat them cold, straight from the container, barely take a breath between bites good. You won’t believe they’re non-dairy. Perfect side dish for MamaSezz Veggie Loaf, or anything else really. Our Heartbeet Gang likes to eat them for breakfast.

This is the best recipe on this site IMO.
They aren’t kidding when they say you’ll want to eat it cold right out of the package. The first time I tried it, I grabbed my phone to look up how many calories per serving and how many servings there were. (Two servings coming in at 120 per serving.) I ate the whole tray (heated). I burned the roof of my mouth and may have forgotten to chew. (#noregrets) I now have to find a way to move the contents of these two serving trays into a 9 x 13 casserole dish to pass as a non-vegan side that my family will eat at holiday dinners.
It’s good stuff.

Side: Heat and enjoy as a side dish.

Breakfast Sandwich: Layer into a breakfast sandwich.

Cheesy Dinner Potatoes: Heat and mix with steamed spinach, garlic powder and cannellini beans.

Asparagus Side: Heat and top with grilled or steamed asparagus.

Potato Leek Soup: Blend with veggie broth to make Potato Leek Soup.
