Oats, sweet onions, garbanzo beans, zucchini, mushrooms, red peppers, spinach, tomatoes, carrots, garlic, spices, sea salt, black pepper, fennel, walnuts, low-sodium tamari

Meatballs: Form into meatballs and bake or pan fry until crispy. Enjoy over pasta marinara.

Veggie Burgers: Form into patties and pan fry, bake or grill.

Good Flavor but Mushy

Texture was mushier than I was expecting, definitely wouldn't eat this alone. Flavor was good, just wish the spinach was smaller as pieces were quite stringy.

Be creative with the loaf

I’ve made my own and this was similar. Texture is an issue so I crumbled it up, added some corn, V8 juice, and stuffed peppers.

Veggie Loaf with Hearts of Palm Pasta and Asparagus

I enjoy the versatility of the veggie loaf and how easily it can be paired with various vegetables or grains to make a delicious dish. It is well seasoned. In my opinion, the texture is such that it is best eaten in combination with other foods rather than eaten as a solo entree.

Makes great sandwiches!

I slice it to put on whole wheat bread with some no-sugar ketchup or even some stone ground mustard, add some greens and it reminds me of a good old fashioned, cold, next day, leftovers, meatloaf sandwich…..but good for you! I’ve only eaten it this way but can imagine it would be good in a tofu scramble or in a pasta dish as your protein. Tasty!!
