1. Stacy Brobst - who lost 40 pounds and became a long-distance cyclist at 45 years old
Stacey Brobst, was born with the rare syndrome, thrombocytopenia absent radius (TAR). She grew up eating your classic Standard American Diet. Her digestion issues started to get the best of her, and she felt as though she could hardly digest on her own anymore. She was putting on weight, and even discovered that she was part of a small group of people with TAR that couldn’t digest animal proteins.
Today, Stacey is 40 pounds lighter, her immune system started to work, and at 45 she’s training for a Century, as well as trying to complete 1000 miles on her bike…100 percent plant powered!
2. Cindy Thompson - the firefighter who dropped 7 uniform sizes and now helps first responders prioritize their health
Cindy Thompson was eating the typical fire fighters diet and had a serious cheese addiction. Like, wake up in the middle of the night to take a bite addicted. Her declining health and daunting family health history was ever looming, and one day she decided she had to make a change.
“I couldn’t change my genetics and I didn’t want to stop being a firefighter. So, I researched cancer risk reduction and found study after study pointing toward decreased incidence of all types of cancer with significant reduction or elimination of the consumption of animal protein. But more than that, a whole foods, plant-based diet was also found to reduce, even reverse Type II (adult onset) diabetes, and the cardiovascular benefits were extremely compelling too.”
Today, Cindy continues to fight fires and became an adult-onset athlete, running marathons, participating in adventure races, and completing Ironman triathlons, none of which she had ever done before!
3. Kate Dunbar - who went from crippling arthritis to completing a half marathon
Kate Dunbar, who suffered from Psoriatic Arthritis to the point where she could barely walk, was starting to lose hope.
“I developed awful runaway inflammation where many joints and tendons in my body became excruciatingly painful and I spent an entire summer in bed and a year off work, barely able to walk.”
After noticing that some foods actually affected how her joints felt, and doing some research on her own, Kate decided to go plant based. Today, she is a member of the Vegan Runners Community in the UK, and has completed a half marathon. The next day she stated:
“I feel so well!! My legs are not aching at all today, I feel great! I feel empowered in my life to do whatever I want.”
