This single serve, plant-based sauce recipe can be enjoyed over noodles, in your lasagna, over brown rice, or even on a sandwich. In fact, this recipe is a favorite go-to of the MamaSezz team.
Loaded with greens, this vegan pasta sauce recipe is immunity-boosting, and loaded with iron and protein! Who said delicious had to be complicated?
Ingredients:
Sauce:
1 handful of fresh basil
1 handful of fresh spinach
1 thumbnail sized chunk of lemon, or the juice from 1 wedge
1/2 a clove of garlic
1/4 cup of peas (split in half)
3/4 cup of Mama's Mac Sauce
Pasta + Toppings:
Sea salt and pepper to taste1/4 cup of peas
1 serving of brown rice or lentil pasta
1/2 green onion
Directions:
1. Boil pasta per direction on the bag, strain and set aside
2. Blend together sauce ingredients until smooth, and heat
3. Pour sauce over pasta, and add 1/4 a cup of peas and 1/2 a chopped green onion for garnish
4. Add salt and pepper as needed (recommended)
Hot tip: If your sauce is too thick, add a little water, or unsweetened non-dairy milk
