The folks in our private Facebook group recently told us they're having an especially tough time figuring out whole food plant-based breakfast recipes. Enter sweet potato toast. The latest Cooking with Caroline recipe and your new morning go-to.
Sweet potatoes have been deemed one of “the world’s healthiest foods” because they are jam packed with active nutrients! Some of the longest living populations on the planet sustain themselves on a diet heavy with sweet potatoes.
This sweet potato toast is perfect for breakfast, snack time, and even dessert!
1 large sweet potato, cut lengthwise into ¼ inch slices. Toasted.
Toast slivers in a toaster or toaster oven for 6-8 minutes. The outside should be crunchy and browned, and the inside should be soft.
Option 1: Smear with natural peanut butter, drizzle with agave, load with sliced banana, and dust with cinnamon
Option 2: Smear with hummus (oil-free), load with chopped green onion, and dust with sea salt and crushed black pepper. (Add toasted pine nuts for an extra crunch!)
Option 3: Smear with natural almond butter, and sprinkle with dried cherries.
...just remember, the options are unlimited! Try it with mashed avocado, garlic power, salt, and pepper. Smear on some peanut butter and all fruit jam. Dip in honey mustard for a late night snack. Anything bread can do, sweet potato toast can do better!
