Quinoa Flax Gluten-Free Breakfast Cookies

This simple tasty vegan gluten-free recipe is perfect for those who like a sweet treat to start the day. Prep Time: 8 minutes

Cook Time: 20 minutes

Servings: Makes about a dozen cookies


1 cup of non-dairy milk

1/3 a cup of raw, white quinoa

1/2 a cup of flaxseed (ground)

1 Tablespoon of apple cider vinegar

1 teaspoon of cinnamon

1/4 a cup of maple or date syrup 

a dash of sea salt

1/3 a cup of raisins

1/4 a cup of all-natural peanut butter 

1 teaspoon of vanilla extract 


Cooking Instructions:

Preheat oven...

400 degrees


All ingredients together except for raisins until creamy smooth


the raisins into the batter, until evenly distributed


onto a non-stick baking sheet or mat into cookie-sized blogs. 


for 20 minutes (longer for more crunch) and set aside to cool.
