Plant-Based Sweet Potato Bolognese Recipe

This hearty sweet potato bolognese is the perfect dish for your next dinner party. Guaranteed to please a crowd - you won't miss the meat. Sweet potatoes are packed with nutrients and the cashew cream makes gives this dish a delightful creaminess, without any of the dairy bloat.

Serves: 4-6

Prep time: 10 minutes

Cook time: 20-25 minutes 

Ingredients

    2 sweet potato, cubed

    2 yellow onion, chopped

    2 carrot, chopped

    2 rib of celery, chopped 

    2 cup of white mushrooms, chopped

    8 oz of lentil, brown rice, or whole grain pasta

    1-2 cups MamaSezz oil-free marinara sauce 

    2 TBSP cashew cream (recipe here)

    Instructions

    1. Saute onions, carrot, and celery with water for 5 minutes

    2.  Add mushrooms, sweet potato, a little more water and cook and stir on medium for 20 minutes or until sweet potato is tender

    3. Make pasta per box instructions 

    4. Add cooked veggies, pasta, and cashew cream to marinara
