When it's difficult to get out to the grocery store, it's good to have some go-to recipes featuring the frozen foods and plant-based pantry staples you've got on hand. 

3 plant-based recipes using only frozen ingredients and pantry staples

1. Butternut Squash Bisque

Serves: 2-4

Ingredients

1/2 a cup of frozen raw cashews, soaked overnight until soft* 
1 lb of frozen butternut squash
½ teaspoon of garlic powder
¼ teaspoon of cinnamon 
1+ cups of veggie broth or water 
Sea salt to taste 
*if you didn’t plan ahead, you can heat them submerged in water for 2 minutes in the microwave, and set aside for 10 minutes to soak

Instructions: 

  1. Blend all ingredients in a high-speed blender until smooth
  2. Heat on the stovetop until mixture thickens and heats thoroughly 
  3. Serve and top with crushed black pepper

2. Nice Cream

Serves: 2

Ingredients:

2 frozen bananas

Instructions:

1. Blend bananas in a food processor until creamy smooth

2. Enjoy immediately 

3. Feel free to add flavors like vanilla, fruit, raw cacoa powder, or all natural peanut butter

 

3. Vegan cauliflower Fried Rice 

Serves: 2

Ingredients:

1 bag of frozen cauliflower rice 

2 cups of frozen peas, corn and carrot medley 

2 Tablespoons of low sodium tamari 

½teaspoon of garlic powder 


Instructions: 

  1. Saute all ingredients together on high heat until warm
