You don't need dairy to have a creamy, savory meal. Proof: this recipe for Creamy Mushroom Quinoa with Vegan Alfredo. Made with Mama's Mac Sauce, this plant-based meal is rich, flavorful, and packed with calcium, fiber, and protein. No oil, no dairy, and no processed ingredients! Just whole food plant-based goodness.
Prep Time: 15 minutes
Cook Time: 25 minutes
Yield: 1 as an entree, 2 as a side
1 cup of veggie broth
2 cups of sliced baby Portobello mushrooms
2 cups of sliced shiitake mushrooms
1 TBS of Tamari
2 cloves of garlic, minced
1 TBS of thyme
a pinch of freshly ground pepper
1 cup of cooked quinoa
½ cup of MamaSezz Mac Sauce
- Sauté mushrooms in a non-stick pan, using veggie broth to prevent sticking. Cook for about 15 minutes
- Add a few more TBS of veggie broth, tamari, thyme, and garlic. Cook for an additional 10 minutes
- Add freshly ground black pepper, and 1 cup of cooked quinoa and cook until quinoa is warm
- Remove from heat and add ½ cup of Mama Sezz Mac Sauce
- Enjoy warm
