Sure, anything tastes good over smashed potatoes, but these vegan jerk lentils were made for the job.
And yes, this is a vegan brunch recipe (though, by all means, please eat them anytime of day you so wish). One of the best parts of plant-based breakfast is that you can throw out those rigid rules about what constitutes a breakfast food in the first place and instead, simply start your day with whatever sounds good that day. No eggs, no rules, no problem.
1/2 cup of MamaSezz Jerk Spiced Lentils
2 Yukon gold potatoes
1/4 cup of fresh cilantro
Microwave, boil, or bake potatoes until soft.
Smash into a non-stick pan and let each side of the potatoes crisp up.
