Oil-Free Home Fries Recipe

Eating a whole food plant-based diet does not mean forgoing brunch. This Sunday enjoy an old favorite (with an oil-free twist). And you may be asking yourself, wait a second, are potatoes healthy?

But here's the deal: like many carbs, potatoes get a bad rap. But they’re not’s just they’re usually smothered in oil, cheese, and butter. These oil-free home fries are baked fresh with veggies and spices. Enjoy!

Prep Time: 20 minutes

Cook Time: 50 minutes

Yield: 4 servings



3 russet potatoes, cubed

1 onion, diced

3 cloves of garlic, minced

Sea salt

Black Pepper

Garlic Powder


A few handfuls of spinach


  1. Preheat oven to 400 degrees
  2. Dice potatoes, and blanch for 10 minutes in boiling water
  3. Pat dry, spread out on a nonstick baking sheet (with parchment paper or a silicone mat), season with black pepper, paprika, and garlic powder
  4. Bake potatoes on 400 for 40 minutes or until crispy
  5. In a non-stick sauce pan, sauté onions and garlic for 10 minutes, while continuously adding a few TBS of water to prevent sticking
  6. Season veggies with sea salt and black pepper
  7. After 10 minutes, stir in spinach and set aside
  8. Once potatoes are done baking, season with black pepper and sea salt
  9. Add potatoes to sauce pan with veggies, stir together and enjoy hot
