Plant-Based Dessert: Raspberry Lime Chia Jello

Looking for a simple plant based dessert? Try this raspberry lime chia Jello! It’s smooth, crunchy, tangy and sweet...not to mention easy to make! This refreshing dessert is the perfect addition to any party, potluck, or family dinner.



Prep Time: 5 minutes (then in the fridge for 30+ minutes or overnight)

Yield: 2 Servings


1 cup of water

½ cup of raspberries

½ a lime, juice and zest

a pinch of sea salt

2 TBS of maple syrup

1/3 cup of chia seeds


  1. Blend until smooth: water, raspberries, lime juice (1/2 lime), sea salt and maple syrup
  2. Once blended, add chia seeds and blend again
  3. Pour mixture into 2 glasses and chill for 30 minutes
  4. Zest lime, and sprinkle on top of chia Jello cups
  5. Chill overnight in refrigerator, and enjoy cold
