Raw Vegan Cucumber Rolls with Peanut Sauce Recipe

Looking for a refreshing and crunchy appetizer for your summer cookout? These roll-ups are sweet, salty, and healthy, to boot! They're a great source of fiber, protein, and vitamins A and C. Not to mention, these raw vegan cucumber rolls are absolutely beautiful! Topped with a savory peanut sauce, these summertime munchies can be eaten with chopsticks or as finger food. Enjoy!

Prep Time: 20 minutes

Yield: 15-20 rolls (serves 4)

1 European cucumber

1 large carrot

1 avocado

a few TBS of sesame seeds


2 TBS all natural peanut butter

¼ tsp garlic powder

¼ tsp minced ginger

1 tsp honey or agave

1 tsp tamari

a splash of coconut milk


  1. Make thin lengthwise slivers of cucumber and carrot with a vegetable peeler
  2. Dice the avocado into small, think chunks
  3. Lay 1 lice of cucumber down, and line with sliced carrot
  4. Add about 5 avocado chunks on top of the carrot
  5. Roll up into a thin spiral (similar to sushi)
  6. Repeat, until you have used up your cucumber, carrot and avocado
  7. Sprinkle with sesame seeds
  8. Whisk together sauce ingredients, and drizzle some of the sauce over the roll-ups
  9. Spoon the remaining sauce into a dish of dipping
  10. Enjoy
