Vegan Quinoa Lunch Bowl with Broccoli and Mushrooms

A healthy vegan lunch bowl that’ll actually fill you up? You betcha. This Vegan Quinoa Lunch Bowl recipe has plenty of plant-based protein and fiber to keep you full and happy all afternoon. Pro tip: batch cook this quinoa lunch bowl and store in the fridge for ready-made meals throughout the week.


Prep Time: 10 minutes

Cook Time: 30 minutes

Servings: 2

Ingredients

2 cups of mushrooms, chopped

1 head of broccoli, chopped

2 large handfuls of spinach

1 cup of quinoa, cooked

⅓ teaspoon of garlic powder

½ teaspoon of low sodium tamari

½ teaspoon of lemon juice

1-2 cups of veggie broth

¼ a cup of tahini


Cooking Instructions

In a heated pan, saute…

Mushrooms and veggie broth until mushrooms are soft


Then add in...

Chopped broccoli and a splash more veggie broth to prevent from sticking


Once the broccoli’s softened, stir in…

Cooked quinoa, spices, Tamari, lemon juice, and spinach.


When spinach is wilted…

Spoon everything into your favorite bowl and drizzle with tahini
