4-Ingredient Vegan No-Bake Oatmeal Cookies

Sick of vegan cooking recipes with recipe lists a mile long - and filled with ingredients you've never even heard of (arrowroot starch, anyone?!). Here at MamaSezz, we like to keep things simple - and tasty. These 4-ingredient vegan no-bake oatmeal cookies are a plant-based version of the cookies your mom used to whip up, minus the refined sugar.

The best part? You've probably got all the ingredients on hand.

Prep Time: 5 minutes

Servings: 12-16 cookies

Ingredients:

1 cup of old-fashioned oats (uncooked)

1 cup of all-natural peanut butter (or nut butter of choice)

1/4 cup maple syrup or date syrup

2-4 Tablespoons of raw cacao powder (depending on how chocolately you want them!)

Cooking Instructions:

Line baking sheet...

with parchment paper to prevent sticking

Whisk together...

Peanut butter and maple syrup

Heat up until warm...

Peanut butter and maple syrup mixture in the microwave in 20-30 second increments, stirring in between. (Can be heated on stovetop in sauce pan on low, stirring constantly to prevent burning.)

Fold in...

Oats and cacao powder and mix well.

Form cookies...

by taking heaping Tablespoons of the cookie mixture and plopping on your parchment paper. Flatten with fork or spoon.

Freeze...

Your cookies for 15-20 minutes to firm them up...then enjoy!
