Prep Time: 15 minutes
6 ears of corn
a few TBS of chopped red onion
1/2 cup of fresh cilantro
Crushed black pepper to taste
Cilantro Lime Sauce:
½ cup of soaked and drained cashews
the juice from 1 lime
1 tsp of maple or date syrup
1 tsp of chopped shallots
1/3 clove of garlic
a dash of sea salt
1/4 cup of fresh cilantro
Less than a cup of water
½ cup of crushed cashews (do not blend)
Soak ½ cup of cashews until soft (use warm water to speed along process)
Microwave 3 husks of corn at a time, in husks for 4 minutes. Let sit until cool, then husk.
Blend together “Cilantro Lime Sauce” ingredients, except for the crushed cashews. Once sauce is smooth, stir in crushed cashews.
