Dairy Free Pumpkin Spiced Latte

Time to pull out your flannels and cozy socks because it’s pumpkin spice season! It’s easy to hate on, participate in ironically, and then end up loving. Here is a plant-based pumpkin spice latte recipe that is creamier than the real thing! No waiting in line for a Starbucks pumpkin spiced latte either. This version is loaded with protein, fiber, and potassium. It’s great for your skin, and even better for your gut health. Too much pumpkin spice never hurt anyone… 

Prep Time: 5 minutes (plus soaking overnight)

Servings: 1 

Ingredients:

¼ a cup of cashews

4 dates

½ teaspoons vanilla extract

2 Tablespoons pumpkin

2 teaspoons pumpkin spice mix

Dash of sea salt

1 cup of non-dairy milk 

A sprinkle of cinnamon 


Cooking Instructions: 

Overnight… 


Soak your cashews and pitted dates. Didn’t plan ahead? Soak them in hot water for 15 or more minutes. 


Blend together…


 the rest of the ingredients except for the cinnamon, until creamy smooth. 


Finish with…


A sprinkle of cinnamon or a cinnamon stick if you’re feeling festive.

Optional: add a splash of espresso for a morning boost.  

Enjoy with a toasty side of grilled MamaSezz Cornbread. Dust with cinnamon and drizzle with maple syrup!
