Quick and Easy Vegan Protein Pancakes (You Won't Believe These Are Gluten-Free!)

These vegan protein pancakes are simple to make, and here's the kicker, healthy for you! Super filling, this revamped riff on a breakfast classic is loaded with fiber, iron and potassium.

So start your day off right – with comfort food you can feel good about. These WFPB protein pancakes are gluten-free and refined sugar-free too!

Serve with your favorite chopped fruit. 

Recipe yields: About 6 pancakes
Prep time: 5 minutes
Cook time: 6 minutes per batch 

Ingredients

1 cup of chickpea flour (garbanzo bean flour)

3/4 teaspoon of baking soda

2 Tablespoons of date sugar

1 teaspoon of vanilla extract

1/2 teaspoon of cinnamon

1 cup of non-dairy milk 

 

Directions

Mix dry ingredients in a bowl

Add wet ingredients 

Cook like pancakes 

Top with maple syrup, date syrup and/or fresh fruit
