Fudgy Vegan Brownie Recipe

Black beans in brownies? You bet your plant-based bottom! Turns out, they’re actually what’s been missing from your vegan brownie recipe all along. Black beans make the ideal fudgy brownie dough. And this recipe is gluten-free, refined sugar-free, and high in fiber, protein, and potassium. All good reasons to have another brownie.

Cook Time: 25-30 minutes

Ingredients:

2 cups cooked sweet potato
1 cup black beans
8 dates, soaked and pitted
6 Tablespoons cocoa powder
6 Tablespoons natural peanut butter
¼ cup of maple or date syrup

¼ cup of coconut flakes or crushed walnuts (optional)

Baking Instructions:

Preheat oven to 350 while you blend until smooth...

Sweet potato

Black Beans

Dates
Cocoa powder
Natural peanut butter

Maple or date syrup

Then...

  • Spread into a baking sheet and top with coconut flakes or walnuts
  • Bake for 25-30 minutes
  • Chill for a few hours and enjoy cold!
