Quick and easy is the name of the game with this zesty vegan zoodle salad. The oil-free dijon mustard adds yummy zip, with zero oil. Experiment with different spiralized veggies based on seasonal availability like beets, sweet potatoes, and butternut squash - the possibilities are endless!

1 large carrot
1 medium zucchini
¼ teaspoon of garlic
½ teaspoon of dijon mustard
¾ teaspoon of maple syrup
Zest and juice of 1 lemon juice
Pince of salt and black pepper to taste
Garnish with sliced avocado (optional)

Instructions:

In a large mixing bowl combine...
