Whole food plant-based oatmeal raisin cookies

This whole food plant based take on oatmeal raisin cookies is an easy vegan recipe, full of fiber, and loaded with nutrients! If you're cooped up inside baking, give these healthy cookies a try. Perfect for as a healthy dessert or even a sweet breakfast!

Prep time: 15 minutes 

Bake time: 25 minutes

Servings: 20 cookies

Ingredients:  

1 cup of rice flour

1 1/2 rolled oats

1/2 cup of date sugar

1 teaspoon of cinnamon

1/2 teaspoon of baking soda

1/2 teaspoon of salt

2/3 cup of apple sauce

2 Tablespoons of flaxseed

1 1/2 cups of water

1 1/2 teaspoons of vanilla extract 

1/2 cup of raisins

 

Cooking Instructions: 

Preheat oven...

350 degrees (F)

 

Mix... 

Wet ingredients together

 

Then mix...

dry ingredients together 

 

Then mix...

Wet and dry mixtures until blended 

 

form...

cookie dough balls and smush down on baking sheet or parchment paper

 

Bake...

for 15 minutes and let cool
