5 Plant-Based Foods to Stuff Instead of Turkey for Your Vegan Thanksgiving

 If you’re new to the plant based lifestyle and worried Thanksgiving just won't be the same, remember one thing: stuffed veggies are the bomb. Seriously. They're so good. You won't miss turkey.

What to stuff? Well, you can pretty much take any vegetable, hollow it out, and stuff it with…again, pretty much anything. Then bake it up and you're golden!

Need a little more guidance than "stuff any veggie with any other veggie?" No problem. I'm coming at you with five of my favorite and delectably stuff-able plant-based foods for your vegan Thanksgiving.

And Now...5 Plant-Based Foods to Stuff (Instead of Turkey)

The following veggies pair particularly well with the traditional stuffing recipe shared above...

1. Pumpkins

I know, this one is obvious. For the last few months it’s been pumpkin this and pumpkin that. But hey, why not lean into it? Pumpkins are amazing for your skin, and even to boost your immunity!

Make pumpkin your main dish by whipping up this Vegan Stuffed Pumpkin Recipe (though to keep things WFPB, we recommend omitting the oil).

2. Acorn Squash

This plant-based Thanksgiving Stuffed Acorn Squash Recipe is simple to make, easy to bake, and spiced up well. 

3. Russet Potato Skins 

You know the routine here: Bake a potato, cut in half, scoop out the insides, bake a little longer, fill with stuffing and bake a little longer. Yeah, this one is that easy. Bonus tip: sometimes I even add mashed potatoes to my stuffing to make it extra moist! 

4. Mushrooms

Mushrooms have a classic “meaty” flavor, so it’s no wonder people enjoy them stuffed as a plant-based swap for meat. And they're one of the best plant-based foods to stuff! Try our classic stuffing recipe stuffed into a large Portobello mushroom and then baked until juice starts to run out of the mushroom. 

5. Sweet Potato Skins 

Just follow the recipe for potato skins above and you’ll be golden! Who needs Turkey when you can eat potatoes 24/7. Please and thank you.
