Missing Eggs Benedict? Moving to a whole food plant-based lifestyle doesn’t mean your Sunday morning has to be bland! Case and point: this vegan breakfast Benedict recipe. Next time you've got vegan brunch on the mind, whip up this protein-packed dish and indulge without the cholesterol.
Cook Time: 20 minutes
Prep Time: 10 minutes
1 cup of MamaSezz Mac Sauce
1 Tablespoon of dijon mustard
1 teaspoon of Tamari
-1/2 a teaspoon of turmeric
4 slices of tofu
1 cup of veggie broth
4 english muffins (100% whole grain)
4 slices of tomato
sliced red onion
Combine veggie broth with Tamari and ½ of the turmeric. Add to a non-stick pan with tofu. Heat until liquid cooks off.
While that’s cooking…
Mix MamaSezz Mama’s Mac Sauce, Mustard and the other half of the turmeric. Add a dash of black pepper. Heat until warm, and sauce thickens.
Toast 2 whole grain english muffins and stack with tofu, tomato, red onion and sauce.
Top with just a sprinkle of paprika and chives (optional)
